Making enchiladas out of charcoal

Ever heard the phrase "when life gives you lemons, make lemonade"?

We were at my Brother's house, in the final stages of preparing a great chicken and spinach enchilada dinner and the power goes out!!!  All we needed to do was 'toss' them in the oven to heat through!!  Now what?

Called the electric company...not to worry, crews are on way!  Do we have an ETA?  No, it's a widespread outage.

In the meantime, what do we do with these enchiladas??  Throw them on the grill!  Played Apples to Apples for the 30 minutes they were on the grill.  When Tim walked outside to take them off the grill, the power came back on!!

Wow!  What a great meal!  Nice smoky flavor.  Think I will make these at home, too!

Start of a new project

So, quite a few people that I know maintain blogs and I love reading them and keeping up with their lives.  So why am I just now catching onto the trend? 

I'll try to do a good job and keep up with my blog....fingers crossed!  I am horrible with taking pictures, but hopefully this blog and the ease of my new camera will make that a thing of the past.
